Sometimes you just need salad. Lot’s of salad.
I’ve been in that mood over the past few days. It’s like my body has a trigger point when it goes, ‘that’s enough now lady, please feed me something fresh and green pronto’!
However much we might wish it otherwise, 80% of the time it’s plant food that should be tipping the scale, not the other way round! This is a great dish to correct that balance, if like me you’re prone to getting a little over-excited sometimes.
Super fresh and tasty, it’s also brightly coloured. Look at that, it practically screams nourishment, don’t you think?
You may have realized by now that I’m a big fan of fruit in salads, and this broccolini & apple salad is no exception.
The apples are crisp and juicy and go surprisingly well with tahini. That was a little experiment which thankfully turned out great!
The dressing comes together quickly, it’s simply tahini, greek yoghurt, honey and fresh lemon. Creamy and nutty it adds a bit of richness to an otherwise light dish.
It’s the greens that truly take centre stage though. Broccolini, snow pea sprouts, asparagus, green beans. Come at me nutrients!
Any mix of green veggies will do; zucchini, spinach, kale, green capsicum, broccoli, snow peas, beans, etc. You get the idea.
It’s very simple to prepare you just steam, pan-fry or even microwave (go on, I won’t tell anyone!) the greens till just cooked before throwing in the rest of the ingredients.
Easy as that!
There’s still a surprising number of salads that are just a bunch of leaves and some tomato and cucumber. Why limit yourself to such a boring pile of sadness?
Salads can be so much more tasty and filing than that, and really take next to no time to throw together.
This salad is fresh, crispy, tangy and really wholesome. Your body will love it as much as your taste buds!
We gobbled it down for lunch on it’s own, but it would pair wonderfully with roast chicken if you happen to feel so inspired.

- 1 bunch broccolini
- 2 medium apples, quartered and sliced
- Handful of snow pea sprouts
- 100gm green beans
- 1 bunch asparagus
- 3 radishes, finely sliced
- 100gm no fat plain yoghurt (I use Chobani)
- 1 tsp tahini
- 1 tsp honey
- Juice of 1/2 lemon
- Zest of 1/2 lemon
- 1 tsp sesame seeds
- Steam (or boil/microwave) the broccolini, asparagus, green beans until just cooked
- Blanch greens in cold water and set aside to drain
- Finely slice the radishes and apples
- Combine the tahini, yoghurt, lemon and honey in a bowl
- Arrange the greens, apples, radishes and snow pea sprouts on a plate
- Spoon over the dressing and sprinkle with the sesame seeds and lemon zest
